     Easy Mushroom Omelet

Ingredients
1/2 tsp. olive oil
1/2 cup sliced mushrooms
2 large eggs
salt and freshly ground pepper, to taste
1/2 whole wheat pita
 

Instructions
Warm olive oil in a small nonstick skillet over high heat. Add mushrooms and saute until golden, 3 or 4 minutes.
Meanwhile, beat eggs in a bowl with slat and pepper to taste. Add to the pan, tilting it so egg flows around. Cook 2 to 3 minutes, or until omelet is golden on the bottm and set on top. Fold and stuff into a whole wheat pita half for easy on-the-go eating
