     Banana/Lemon Loaf

Ingredients
1/2 C butter or marg
1 C sugar
2 eggs
1 C masshed bananas
2 C flour
3 tsp baking powder
1/2 tsp salt
1 tsp grated lemon rind
2 Tbl lemon juice
 
1/2 C walnuts or pecans

Instructions
Cream butter and sugar til light and fluffy. Add eggs beat after each. Beat in bananas and lemon juice
Sift together flour, baking powder and salt. Add to creamed mixture and mix until flour disappears.
carefully fold in nuts and lemon rind.
Pour into well greased 9x5 loaf pain. ( Teresa uses 3 mini pans). Bake in preheated 350degree oven for 50-60 minutes until wooden toothpick comes out clean, Cool 10 minutes. Remove from pan to cooling rack.
