     Caesar Salad

Ingredients
1 head romaine lettuce
3oz. reggiano parmesan cheese, cut in 1-inch pieces
1 large garlic clove, peeled
4 anchovy fillets
1 tbsp. egg substitute
2 tsp. lemon juice
1 tbsp. dijon mustard
2 tsp. red wine vinegar
1 tsp. worcestershire sauce
 
1/8 tsp. ground black pepper
1/2 cup extra virgin olive oil
1 cup croutons

Instructions
Clean the lettuce and tear it into 1-inch pieces. Dry the lettuce well and reserve in a large bowl.
Drop cheese, into food processor and process 30 seconds until finely chopped. Sprinkle the cheese over lettuce.
In food processor work bowl, mix the garlic, anchovy fillets, egg substitute, lemon juice, mustard, vinegar, worcestershire sauce, and pepper. Process about 10 seconds until well blended. With the machine running, drizzle the oil thriugh the small feed tube in a steady stream. The dressing will emulsify.
sprinkle the croutons over the lettuce and add the dressing. Toss to coat and serve immediately.
