     Zucchini-Orange Bread

Ingredients
3 cups all purpose flour
1 tsp. salt
1 tsp. baking powder
1 /4 tsp. baking soda
1 cup sugar
1/2 cup egg substitute
1/3 cup canola oil
1 tbl. grated orange rind
1 tbl. fresh orange juice
 
2 cups shredded zucchini
1/2 cup chopped pecans, toasted
GLAZE
1/2 cup powdered sugar
2 tbl. fresh orange juice

Instructions
Preheat oven 350º Combine flour and next 3 ingredients into a large bowl, stir with whisk. Make a well in center of bowl. Combine sugar and next 4 ingredients in small bowl. Add sugar mixture to flour mixture, stirring just until moist. Fold in zucchini and nuts. Divide batter between 2 -8x4 inch loaf pans, coated with cooking spray. Bake at 350º for 50 minutes or until wooden toothpick comes out clean. Cool 10 minutes in pans on wire rack, remove from pans. To prepare glaze, combine powdered sugar and juice, stirring with whisk. Drizzle evenly over warm loaves. Cool completely on wire racks.
