     Irish Soda Bread

Ingredients
4 cups flour
1 teaspoon baking soda
1 teaspoon salt
1/3 cup sugar
2 eggs, beaten slightly
1 1/3 cup buttermilk
4 tablespoons butter (1/2 stick), melted
2 cups currants, or raisins, or golden raisins
 

Instructions
Combine flour, soda, salt and sugar. Add eggs, buttermilk, butter and dried fruit. Mix with spoon until combined. Dough will be sticky.
Turn out onto slightly floured countertop and knead just until smooth (not ver much). Divide dough in half. make each half into a round mound. Cut an "X" into the center of each loaf with a knife.
Bake in center of oven 45 minutes, or until golden and the bottom sounds hollow when thumped.
Generously give one away and keep the other for yourself.
