     Quick Minestrone Soup

Ingredients
1 1/2 pounds ground beef
1 large onion, chopped
1 28 oz can tomatoes
6 cups water
6 bouillon cubes
2 teaspoons basil
2 teaspoons oregano
1 teaspoon garlic salt
1 20 oz bag frozen mixed vegetables
 
1 cup elbow macaroni
2 small zucchini sliced
1/2 cup red wine

Instructions
Crumble beef into 6-8 quart Dutch oven. Cook for 2-4 minutes.
Add onion and cook until soft. Drain fat. Add tomatoes, water, bouillon, and spices. Bring to boil, breaking up tomatoes. Reduce heat.
Simmer uncovered for 5-10 minutes. Stir in frozen vegetables and cook for 3 minutes. Stir in macaroni and cook for 4 minutes.
Add zucchini and wine and cook for 5 minutes.
Serving Suggestions
Sprinkle with Parmesan cheese when serving.
