     Spinach & Rice Pie

Ingredients
1 onion
2 tsp butter
1/2 tsp salt
1/4 tsp pepper
1 1/2 c milk
2 c. cooked rice
1 pkg frozen spinach
1 egg plus 2 egg whites
 

Instructions
Saute 3/4 cup onions in 2 TB of butter stir in 1 TB flour with salt and pepper. Saute till just starts to brown and gradually add 1.5c milk until blended.
Simmer about 12 minutes to thicken. Set aside to cool enough to add eggs without curdling Whisk 2 eggs
Stir 2 cups of cool rice 1c feta and 1 pkg. thawed and drained spinach. add whisked eggs.
Pour into a sprayed 9 inch pie plate Sprinkle top with parm cheese and cook 35 mins. broil 2 mins to brown the top.
Serving Suggestions
serve with Tomatoe chutney type sauce
