     Ravioli w/ Mushroom Cream

Ingredients
2 boxes of mushrooms
1/2 qt half and half or cream
1/2 cup parmeasan
1 tbsp brandy
2 large leeks
1/4 TSP RED PEPPER FLAKES
3 garlic cloves
2 pkgs small cheese raviolis
 

Instructions
Put cream, red pepper flakes & 3 cloves garlic in a sauce pan bring to a boil and then lower and simmer till reduced to one cup (bout 20 mins) then strain out the flakes and the garlic.
Sweat two large leeks cut in half moons in 1 tbsp butter. Cut mushrooms with an egg cutter to make long strips and add to the pan continue to saute.
just before serving reheat cream and reheat mushroom mix and add 1 tbsp brandy. add in 1/2 cup parmesean toss on pasta and serve.
cook pasta for 8 mins when ready to serve.
Serving Suggestions
serve with peas and pan seared tenderloin.
