     Mexican Red Rice

Ingredients
1 c. uncooked rice (not instant)
2 T. lard or peanut oil
2 cloves, minced
1 med. onion chopped
2 ripe tomatoes, chopped
8oz can tomatoe sauce
1 c. chicken broth
1 T. chili powder
3/4 tsp. salt
 
op items...corn, gr. peas, carrots,
gr. or red peppers, pimentos, celery

Instructions
Heat oil in heavy skillet. Add rice and stir over med-high heat until rice is golden brown. Add garlic and onion, saute until onion just begins to brown.
Add tomatoes, tomato sauce, chicken broth, chili powder and salt. Lower heat, cover simmer 20-25 min until all liquid is absorbed.
Remove from heat and allow to sit covered, 5 min.
Fluff with fork
