     Pan Seared Scallops with Spinach

Ingredients
3 strips bacon
1 lb. scallops
2 tbl. all purpose flour
1 tbl. cajun seasoning
10 oz. bag prewashed spinach
1 tbl. dry white wine or water
2 tbl. balsamic vinegar
 

Instructions
Cook bacon until crisp. Reserve 1 tbl. bacon grease in pan, drain remaining into bowl. Cut bacon into small pieces, reserve. Rinse scallops, pat dry. In zip lock, combine flour and seasonings. Add scallops, toss. Cook scallops in hot bacon grease, over medium heat for 6 minutes or until browned and opaque, turning once. Remove scallops, deglaze pan with wine or water. Add spinach and cook covered over medium high heat for 2 minutes or until wilted. Add vinegar, toss to coat. Add scallops back in, heat thoroughly. Sprinkle with bacon.
