     Grilled Romaine Salad

Ingredients
2 tbl. red wine vinegar
2 tbl. dijon mustard
1 tsp. tarragon
3 tbl. olive oil, divided
2 romaine hearts, halved lengthwise
 

Instructions
Prepare vinaigrette by combining vinegar, mustard and tarragon. Gradually whisk in 2 tbl. olive oil. Season with salt/pepper. Set aside. Brush remaining oil onto romaine hearts. Grill cut side down for 4-6 minutes. Remove from grill, drizzle with vinaigrette and crumbled blue cheese.
