     Nana's eggplant parmigiana

Ingredients
1-2 eggplants depending on how much you want to make
flour
salt to taste
3-4 beaten salted eggs (May need more)
sauce
mozzarella cheese
vegetable oil
 

Instructions
peel eggplants, slice approximately a quarter inch thick and salt. pur some flour into a dish and 3-4 beaten salted eggs into another. add more eggs as needed.
heat about a half inch oil in large frying pan. dip eggs first into flour, then in egg and fry, turning once, until both sides are golden. drain on paper towels.
make sandwiches of all the fried slices, matching like sizes as much as possible. put a slice of mozzarella into each sandwich, sppon some sauce at the bottom of a baking dish, sprinkle with grated cheese, place the sandwiches in the baking dish, top with sauce and grated cheese and put a slice of mozzarella on top of each sandwich. place a dot of sauce on each piece of cheese. casserole may be made ahead to this point and refrigerated,
bake in 375 oven until sauce bubbles and eggplant darkens around edges.
