Put the flour, butter, salt and sugar into food processor. Process until nice and crumbly and evenly mixed. Then while the processor is running, add 2 egg yolks and 4 tbsp of ice water slowly.

When the mixture starts to come together into a big blob, stop the processor and take the dough out. Separate the dough into two equal halves and then roll each of them out into circles large enough to overhang the pie pan just slightly.

Bake whatever pie you're making according to directions.

This makes enough for bottom and top crust of a large pie pan. If I half the recipe and
roll it out just right I can get a top and bottom for a slightly smaller pie (and cut down on
the fat content!)
