|
preheat oven to 500 degrees.
wipe roast with damp cloth - do not remove fat.

|
|
make deep slits in meat and insert garlic slivers
|
|
|
place meat in pan with 1/2 C water and sear in 500 oven for 15 minutes.
|
|
|
mix herbs de provence into softened butter and spread on top and sides of roast. Lower oven to 325. Return roast oven and roast uncovered checking thermometer for doneness probably about 3 hours or more for a 6lb roast.
