Ingredients
1/2 C marg or butter soft
1/4 C granulated sugar
1/4 C packed brown sugar
2 eggs
1/4 C orange juice
2 t baking powder
1 t vanilla
1/8 t salt
2 3/4 C all purp. flour
 
filling of choice i.e. poppy, prune, apricot and/or cherry

Instructions
with a mixer beat butter on medium speed for 30 seconds or till softened. add sugars, beating till light. beat in eggs one at a time,until well combined. slowly add orange juice, baking powder, vanilla and salt (mixture may appear curdled). Beat in as much flour as you can with the mixer and stir in the remaining by hand Cover and chill 2 hours.
on lightly floured surface roll one portion of the dough to 1/8" thickness.using a fluted bisquit cutter or cookie cutter, cut into 2 1/4 - 2 1/2 inch circles rerolling scraps as necessary. brush edge of circles with water and spoon 1/2 t desired filling onto center of each circle.
bring two of the circles opposing edges together towards top to make a V and pull the unfolded edge dow, pinching teh edges together to for a shape like a three cornered hat leaving center slightly open to expose filling. Place on ungreased cookie sheet and bake 10-12 minutes until cookes are lightly browned.
