In lg. pot place cold water andd chicken, garlic, onion, carrots, celery, parsley, bay leaf, (and marrow bones optional), salt to taste, peppersorns. Slowly brint to boil over med. heat. reduce heat and simmer for 3 hours, using spoon to skim as thoroughly as possible.

strain soup, discard onion, parsley, bay leaf and peppercorns. Save other vegetables. Skin and debone chicken and cut up meat. return chicken to pot with vegetables either whole or pureed. add seasonins (carmel chicken soup base) and more salt and pepper to taste.
