     Banana Bread

Ingredients
1 1/2 cup mashed ripe banana (about 3 bananas)
1/4 cup granulated sugar
3/4 cup brown sugar
5 tablespoons butter
1 3/4 cups unbleached all-purpose flour
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/3 cup chopped walnuts
1/2 teaspoon table salt
 
2 large eggs , beaten lightly
1 teaspoon vanilla extract
1/2 cup whipping cream divided

Instructions
Adjust oven rack to lower middle position and heat oven to 350 degrees. Grease and flour bottom and sides of nonstick 9-by-5-by-3-inch loaf pan; set aside. Beat butter until fluffy, then add both sugars and mix well. Add eggs and vanilla and mix well. Add bananas to wet mix.
Mix dry ingredients in separate bowl. Alternate adding dry ingredients and whipped cream to wet mix until both are gone. Add the nuts.
Bake until brown on top, anywhere from 1 hour 15 min to 1 hour 30 min.
