     Italian Plum Chutney

Ingredients
2 Tbsp. oil
½ large onion
1-inch piech fresh ginger, minced
¼ tsp. cinnamon
¼ tsp. allspice
2 tsp. curry powder
2 tsp. chili powder
Salt and pepper to taste
¼ cup water
 
½ cup lime juice
4 Tbsp. cider vinegar
5 Tbsp. brown sugar
20 Italian plums, washed, pitted and quartered

Instructions
Heat 2 Tbsp. of oil. Add onion and ginger. Add spices (the heat helps release their flavors). Add the water to deglaze the pan.
Add the lime juice, vinegar and brown sugar to dissolve. Add the plums. Simmer about an hour.
Serving Suggestions
You can make this several days ahead of time and keep in refrigerator.
