     Chicken 'N' Stuffing

Ingredients
2 celery ribs, chopped
1 large onion, chopped
1/2 c butter
1 pkg (14 oz) seasoned croutons
2 tbs fresh parsley, minced
1/4 tsp salt
1/8 tsp pepper
2 eggs, beaten
32 oz chicken broth
 
4 c cooked chicken or turkey, cubed or chopped
Cranberries, optional
Peas, optional

Instructions
PREHEAT oven to 350°F. In a small skillet, saute celery and onion in butter until tender. In a large bowl, combine the croutons, parsley, salt, pepper and celery mixture.
In separate bowl, combine eggs and broth; pour over bread mixture and toss to combine. Add chicken; toss gently. Add cranberries and/or peas, optional. Transfer to a greased 13x9 inch baking dish.
Cover and bake at 350° for 40-50- minutes or until a meat thermometer reads 160°.
