     Potato Soup

Ingredients
6 cup sliced, red potatoes
2 cups sliced carrots
6 slices thick bacon
1 cup chopped onion
1 cup sliced celery
1 1/2 teaspoons salt
1/4 teaspoon pepper
1 cup milk
1 cup beer
 
2 cups light cream

Instructions
Cook potatoes and carrots in boiling salted water until tender; drain. Saute bacon until crisp; drain and crumble. Saute onion and celery in 2 Tablespoons fat from bacon untill onions are transparent.
Combine potatoes, carrots, onion, celery, bacon, salt, pepper, milk, beer, and cream; simmer approximately 30 minuets (do not boil). When ready to serve, garnish with shredded Cheddar cheese and parsley.
