     Whole Wheat Banana Muffins

Ingredients
2 cups whole wheat flour
2 cups old fashioned oats
3 ripe bananas, mashed
1/2 cup lowfat sour cream
2 large eggs
4 TBSP olive oil
2 tsp vanilla
2 tsp cinnamon
5 tsp baking powder
 
6 TBSP Splenda

Instructions
Preheat oven to 350. Spray non-stick spray into muffin cups (or use liners). This recipe makes 24 muffins, so I used 2 pans.
Mix wet ingredients - bananas, sour cream, eggs, oil, vanilla. Mix dry ingredients - flour, oats, cinnamon, baking powder, Splenda. Add dry ingredients to wet.
Divide mixture into muffin cups. Bake at 350 for approx. 15-20 minutes, or center test on knife is clean.
