     Bok Choy and Shrimp

Ingredients
1 Cup Vegetable Broth
2 Tablespoons Soy Sauce
1 Tablespoon Oyster or Hoisin Sauce
2 Tablespoons Cornstarch
2 Tablespoons Vegetable Oil, divided
2 Pounds Jumbo Shrimp, shelled, and deveined
1/8 Teaspoon Salt
1 Large Bunch Bok Choy, washed and cut into 1" pieces
1 Large Sweet Red Pepper, seeded, cored and cut into 1/4" strips
 
1 Bunch Scallions, washed and cut into 1" Pieces
Cooked Rice

Instructions
In small bowl, mix together broth, soy sauce and cornstarch. Set aside.
In large skillet heat 1 tablespoon oil add shrimp and cook 4 minutes stirring constantely. Remove shrimp to plate and cover to keep warm.
Add remainign oil and stir fry bok choy for 5 minutes add red pepper and scallions and cook an additional 3-4 minutes. add broth mixture and bring to a simmer. Return shrimp to pan and cook for 1 minute, stirring constantly.
Serve with cooked rice.
