Dissolve Yeast in warm water in Lg Bowl.
Stir in all ingredients, but 3 C flour.
Beat untill smooth.
Add Flour untill easy to handle.
Knead for 5 min.
Place in Greased bowl. Turn greased side up. Cover bowl TIGHTLY.
Refrigerate 8 hours, but no longer than 5 Days.
Punch down; Use 1/4 dough per recipe (See Rolls)

Rolls:
Shape into 1 inch balls, using butter on hands to keep dough from sticking. Place in lightly buttered 9x9x2 pan. Brush with melted butter. let rise 1 hour. Bake at 400 degrees 15 min or until golden brown.

Crescent:
Roll dough on floured board into 12 inch circle. Spread with softened butter. Cut into 16 wedges. Roll up tightly beginning at wide, outside edge.
Place rolls with pointed edges underneath on greased cookie sheet. Curve slightly. Brush with melted butter. Let rise 1 hour. Bake 400 degrees for 15 min.

Fan Tans:
Roll dough into 9 x 13 rectangle. Spread with Softened butter. Cut lengthwise into 6 strips, about 1 1/2 inches wide. Stack strips evenly, and cut into 12 pieces about 1 inch wide.
Place cut side down in buttered muffin cups. Brush tops with butter. Let rise 1 hour. Bake at 400 degrees for 15-20 minutes, or untill golden brown.
