Slice potatoes, not quite all the way through, at 1/2 inch increments from end to end. Slice onion in half; slice into wedges. Fan the potatoes out; place onions in the potatoes. Coat the potato with butter, Parmesan cheese, garlic etc; double wrap potato with foil. If outdoors, place the potato over hot coals for 1 hour, turning midway through. If cooking indoors, cook at 350 degrees for 1 hour.
