Wisk together eggs, egg whites, pepper, salt and nutmeg. Set aside.

Heat oil in round skillet over medium high heat. Add mushrooms and cook 2 minutes. Add spinach and cook an additional 2-3 minutes. Scrape mushroom mixture into a bowl and set aside.

Spray skillet with cooking spray. Pour in 2/3 Cup egg mixture. Sprinkle with 1/4 Cup of the mushroom mixture and 1/4 of the feta cheese, on the left side of the egg mixture. Cook 1-2 minutes. Fold right side over left and cook an additional 2-3 minutes. Repeat for three more omelets.

Mix salad greens with dressing and serve along side of the omelets.
