Melt butter in large soup pan over med-high heat. Add onions and saute until translucent, about 10 minutes. Add broth, potatoes, carrots, celery, parsley and sage. Bring to boil, reduce heat to low, cover and simmer 10 minutes.
Add meat, half and half and spinach. Cover and cotinue to simmer about 7 minutes. Season with salt and pepper. Serve hot. Serves 6-8.
