     Chicken Enchiladas

Ingredients
1 stick of butter
1/2 large onion
1 can diced chili peppers
1 can cream of mushroom soup
8 oz. sour cream
1 lb chicken, cooked and chopped
1/2 pkg frozen spinach, thawed and drained well
1 cup shredded Colby Jack cheese
Soft tortilla shells
 

Instructions
Melt butter in a large pan, add onion and sauté til clear. Add chili, turn the heat off, add soup, sour cream, chicken and spinach. Stir until blended.
Place filling in shell, roll and place in 9X13 loaf pan. Spoon extra sauce over the shells. Top with shredded cheese, cover with foil and bake @ 350 for 30 minutes.
