In a deep skillet, season Stew Beef with Salt & Pepper, sear it and simmer until tender.
In a pot of salted water boil egg noodles till aldente.
Back to the beef.....make sure there is still a little liquid in the pan, push the beef to the side or remove and stir in the sour cream & ketchup. Mix in the beef, simmer until hot sauce developes...serve over egg noodles
Variation: try mushrooms in with the beef sauce!
