While the chicken breast is still warm (not HOT) combine it in a large bowl with softened cream cheese, scallion and cheddar cheese. Roll it up in a tortilla and fry for a twist on the classic Pollo Fundido.
Variation: try adding diced tomatoes! Mixture also goes great in a quesadilla!
