     Kelly's Roast Chicken Dinner

Ingredients
1 Whole Roasting Chicken
1 bag baby carrots
Potatoes in 1 inch chunks
Several whole garlic cloves
Salt & Pepper
Pinch Rosemary
Pinch Thyme
Pinch Parsley
Olive Oil
 
1 Lemon

Instructions
Clean up your chicken, remove the giblets, trim any extra fat. Pat dry, rub him down with lemon & olive oil. Sprinkle Salt, pepper, rosemary & Thyme on top and set him in the center of a large baking pan.
In a large bowl combine baby carrots & potatoes, dash with lemon and coat with olive oil. Sprinkle salt, pepper, rosemary, thyme & parsley, mix well & distribute around the chicken in the pan.
Cover with aluminum foil and bake on 350 according to length of time for the size of your chicken. It will take 1-2 hours.
