     Eggplant Parmesan

Ingredients
1 eggplant, sliced lengthwise
Flour, seasoned with salt, pepper & garlic
1 large egg beaten with 2 tblsp milk
1 jar favorite tomato sauce
mozzarella cheese
parmesan cheese
Frying Oil
 

Instructions
Dredge sliced egg plant in egg/milk and flour mixtures, then fry until golden, drain on paper towels.
Layer fried egg plant with sauce and cheeses in lightly greased, deep baking dish. Top with extra sauce & cheese
Bake 400 until bubbly and yummy.
