On a floured surface, roll out a sheet of puff pastry. Place on a non-stick cookie sheet & cover with a layer of dijon mustard, leaving a 1 inch border.
Layer on the Ham & cheese. Brush the 1 inch border with egg wash.
Roll out the second sheet of puff pastry, and place on top, crimping down the edges of the 1 inch border with a fork. Brush the whole thing with egg wash.
Bake according to pastry package directions. Cool and slice into squares. Delicious!
