     Pork Tenderloin with Sour Cream Sauce

Ingredients
5 pound pork tenderloin, boned, trimmed, cut into 6 slices, and pounded
6 slices bacon
3 Tablespoons pork fat
1 cup water
1 1/2 cup sour cream, mixed with 1 Tablespoon paprika
Stuffing
1 1/2 cup bread crumbs
1 small onion, finely chopped
1 teaspoon salt
 
1 teaspoon black pepper
1 teaspoon paprika
1/2 teaspoon thyme
1 Tablespoon dry mustard
Juice of 1 lemon
String to tie tenderloin

Instructions
In a medium size bowl, combine bread crumbs, onion, salt, black pepper, paprika, thyme, dry mustard and lemon juice; mix well. Place a slice of bacon on each slice of pork; add 1/6 of the crumb mixture per slice. Roll up tightly; tie securely. Brown rolls in skillet with pork fat until brown on all sides. Add water to pan; cover and simmer 45 minutes to 1 hour, or until tender. Remove rolls to a hot platter; skim all excess fat from pan. Add sour cream mixed with paprika to skillet; stir until heated through, but not boiling. Pour sauce over pork rolls.
