Whisk together garlic, mustard and vinegar, whisk in olive oil slowly. Stir in oregano. Coat chops on both sides with marinade for at least 20 to 30 minutes at room temperature. Preheat broiler. Place chops in broiler pan; top with any marinade left. Sprinkle with pepper to taste. Broil 3 inches from heat, about 10 minutes on each side.
