     New Zealand Kumara Pie

Ingredients
1 c flour
1/2 c confectioners sugar
5/8 c butter
1 egg yolk
2 T ice-cold water
Filling
1 lrg. egg
1 1/2 c boiled sweet potatoes, mashed
 
1/4 c sugar
2 T unsalted butter, softened
1 t vanilla
1/4 t salt
1/4 t ground cinnomon
1/8 t allspice
1/8 t nutmeg

Instructions
Crust- Put all ingredients in food processor until pastry starts to come together. Roll out on floured board. Put in pie pan then line with baking paper (parchment or waxed). Hold paper in pan with beans or rice and bake at 390 degrees for 12 minutes. Cool
Filling: Put all ingredients in food processor until well mixed. Pour into baked pastry shell and bake 45-55 minutes futher at 390 degress.
Serving Suggestions
New Zealanders would add a scoop a harakeke seed ice cream or butter scotch sauce.
