     Black-eyed Peas

Ingredients
16 oz dried black-eyed peas
1 small to medium ham hock or hog jowl
3 c water
1 small to medium onion, coarsely chopped
1/4 tsp crushed red pepper
1/8 tsp sugar
salt, to taste
 

Instructions
Pick over the peas and rinse well, then soak in cold water overnight. Place ham hock/hog jowl in large kettle/pan with water, bring to boil, and cook for 1 1/2 hours.
Drain peas and add to the ham hock/hog jowl. Add chopped onion, crushed red pepper, sugar, and salt.
Add more water, if needed, to cover peas.
Cover tightly and simmer slowly 2 hours or until peas are tender.
Serving Suggestions
Serve with hot cooked rice, collard greens, and cornbread on New Year's Day for prosperity and wealth.
