     Minestrone Soup

Ingredients
1 onion, chopped
4 cloves minced garlic
1/4 cup olive oil
1 cup chopped zucchini
2 potatoes diced
3 carrotts, sliced
1 stalk celery, sliced
8 cups beef stock
3 cups chopped canned tomatoes
 
1 cup kidney beans, rinsed
1 cup garbonzo beans
2 cups water
basil, parsley, salt, pepper and oregano to taste
1/2 pound small pasta shells

Instructions
In large pot, saute onion and garlic in olive oil, about 5 minutes. Add vegetables, beef stock, tomatoes, and remaining ingredients. Add seasonings, and simmer several hours. Add pasta 15 minutes before end of cooking time. Serve with parmesan cheese.
