     Jill's Hippie Dippy Stir Fry

Ingredients
1/2 of seitan
1/2 package of extra firm tofu, rinsed and pressed well
Spices such as garlic powder black and cayenne pepper, ginger
1 onion, chopped
Baby bella mushrooms, sliced
Zucchini and yellow squash, sliced (summer version)
Sweet potato or another root vegetable, small cubed (winter version)
Carrots, sliced
Broccoli
 
Soy cheese, shredded or sliced thin
Liquid Amino's or light soy sauce
Nutritional yeast
Sesame oil

Instructions
Stir fry onions and mushrooms in sesame oil.
Boil carrots, squash, and zucchini. Add to stir fry when finished.
Add seitan and tofu to stir fry. Add liquid aminos/soy sauce and spices to taste.
Top with soy cheese when done and cover until melted. Top with nutritional yeast right before serving.
Serving Suggestions
Serve with brown rice
