     Instant Potato Lefse

Ingredients
2 cups water
1/2 cup butter
2 tsp salt
6 cups hungry jack potatoes (instant)
2 cups flour
1 pint half and half
 

Instructions
Mix 6 cups Hungry Jack potatoes in water, butter and salt mixture. Add flour and cream alternately and beat until the consistency of bread dough. Roll into balls and refrigerate overnight in covered cake pan. About 24. Fry at 400 degrees on lefse griddle until brown spots appear. Cool slowly between layer of towels to steam.
