     Vichyssoise

Ingredients
1 cup raw potatoes diced and sliced
1 (14oz) can chicken broth
1 tbs butter or margerine
1 small onion sliced
1 cup Coffee Rich
1/4 teaspoon salt
dash pepper
2 tablespoons chopped chives
 

Instructions
Simmer potatoes in chicken broth until tender. Cool slightly. Sautee onion in butter/margerine until lightly browned. Place cream, salt and pepper in blender. Add potatoes, broth, onions and chives. Cover and puree 30 seconds. Chill. Serve cold garnished with chopped chives
