     Zuchini Relish

Ingredients
10 cups zuchini, chopped
4 cups celery, chopped
4 cups onion, chopped
1 large green pepper, chopped
1 red pepper, chopped
1/4 cup salt
3 cups cider vinegar
3 1/4 cups sugar
 
2 1/2 tsp celery seed
2 1/2 tsp mustard seed
2 tsp tumeric
2 tbsp cornstarch

Instructions
Mix together zuchini, celery, onion, green and red pepper and salt. Let stand overnight. Rinse and Drain
Bring vinegar, sugar, celery seed, mustard seed, and tumeric to a boil. Add chopped vegetables. Let stand two hours. Drain juice.
Return to heat and add cornstarch and a little of the juice. Simmer 25 minutes.
Put in sterilized jars and seal.
