Combine bread crumbs, parmesan, italian seasoning, and salt. Mix well. With a paper towel, pat the chicken dray. Lay chicken on a plate and coat with olive oil. Cover chicken with bread crumb mixture and place in baking dish sprayed with cooking spray. Sprinkle remaining crumbs over chicken.
