     Peachy Pork Chops

Ingredients
1/2 c. peach preserves
1 garlic clove, finely minced
2 T. dijon mustard
1 T. reduced sodium soy sauce
2 T. orange juice
1/4 t. crushed red pepper
4 (5 oz).) thin-cut bone-in pork loin chops
1/2 t. salt
1/4 t. black pepper
 
1 t. canola oil

Instructions
Combine the peach preserves, garlic, mustard, soy sauce, orange juice, and red peper in a small bowl.
Sprinkle the chops with the salt and pepper. Heat the oil in a large nonstick skillet over mh heat. Saute the pork chops until browned and cooke through, 4-5 minutes on each sidel transfer to a plate and cover to keep warm. Add the peach mixture to the skillet; bring to a boil. Reduce the heat and simmer, uncovered, until the sauce thickens slightly, about 3 minutes. Spoon the sauce over the chops.
Serving Suggestions
brown rice or mild couscous
