     Sponge Cake

Ingredients
This is a nice simple sponge cake recipe, it can be served so many different ways. With fresh frui
1 cup sifted flour
1 tsp baking powder
1/4 tsp salt
1/2 cup milk
2 tbsp butter
2 eggs
1 cup sugar
1 tsp vanilla
 

Instructions
1) Preheat oven to 350F 2) Grease and Flour a 9 or 10 inch spring form pan 3) Mix flour, baking powder and salt 4) In a small saucepan, heat milk and butter until butter melts. Keep warm until ready to add to batter 5) In a large bowl, beat eggs until they are thick and yellow coloured. Add sugar a bit at at a time while continuing to beat eggs 6) With a wooden spoon, stir in dry ingredients until blended together 7) Add vanilla to the milk and butter mixture, and then add milk mixture to batter 8) Stir until well blended
9) Turn batter into pan and bake 25-30 minutes (cake will spring back when you touch top) 10) Leave cake in pan and let cool completely 11) Run knife around edge of pan to loosen cake and then remove from pan 12) Decorate and serve as desired
