50g mature white cheddar, grated - plus a little extra to garnish
Instructions
Crack the eggs and carefully separate them, putting the yolks in one bowl and the whites in another one.
Beat yolks with some salt and pepper and stir in the ham. Whisk the whites until stiif, then fold into the yolk mixture.
Heat the butter in a frying pan and pour in the omelette mixture.Cook over a medium heat for 2 to 3 mins.
Sprinkle over the cheese, then put the omelette under a preheated grill and cook for 3 to 4 mins,until the cheese is golden and bubbling.Fold over the omelette and slide onto a plate.Sprinkle with the remaining cheese ans serve with salad leaves.
