     Chicken Kiev for 2

Ingredients
2 boneless chicken breasts
60 g room temp. butter
4 TBSP fresh Parsley
1 Clove Garlic, chopped finely
2 TBSP flour
1 TBSP parmesan cheese
Bread crumbs
1 egg beaten
Vegetable oil
 
salt and pepper

Instructions
Mix together butter with garlic, parsley, salt and pepper. Cut a pocket into chicken breast Fill pocket with butter mixture and fasten opening with toothpick
Pour breadcrumbs and parmesan cheese into a bowl and blend well Season flour with salt and pepper You need three bowls Flour, egg then breadcrumbs Dip chicken in that order, flour, then egg, then breadcrumbs Refridgerate chicken for at least 1/2 hour to firm butter so it doesn't leak. Fry chicken 5-6 minutes per side, or until cooked. Alternatively, cook in oven at 350 for 15-20 minutes.
To make your own piping bag to fill chicken more easily-take a large Ziploc bag filled with filling and cut the corner off, the way you would a milk bag and squeeze into chicken.
