     Black Pepper and Herb Crusted Rack of Lamb

Ingredients
2 French lamb racks
1 T. olive oil
1 garlic clove, minced
1/2 T coarsely ground black pepper
1/4 t. salt
1/2 T fresh chervil or flat leave parsley, chopped
1/2 t. fresh rosemary or 1/4 t. dried
1/4 t. fresh thyme or 1/8 t. dried
 

Instructions
Brush lamb with oil. Combine remaining ingredients and rub onto lamb. Cover and refrigerate fro 2 hours. Place lamb racks in pan, meat side down. Set shallow roasting pan in oven and preheat to 475 degrees. Roast for 10 minutes. Reduce heat to 375 degrees and roast for another 10 minutes. Let meat stand, covered for 10 minutes, before carving.
