     Medium White Sauce

Servings   1 cup

Ingredients
2 T butter
2 T flour
Speck of pepper
1/2 tsp salt
Dash of paprika
1 cup milk, or part milk and part light cream
 

Instructions
In double boiler or in saucepan over low heat, melt butter.
Add the flour, pepper, salt, and paprika, and stir until blended smooth.
Slowly add the milk, stirring constantly to avoid lumps. Cook,stirring, until smooth and thickened.
Add 1/2 to 1 cup grated cheddar cheese and 1/8tsp dry mustard if desired. Heat, stirring until melted.
