     Greek Style Stuffed Chicken

Ingredients
Boneless Skinless Chicken Breast
Spinach
Garlic
Feta Cheese
 

Instructions
Flatten Chicken Breasts and season with salt and pepper. Saute spinach with a little garlic.
Place spinach and feta cheese on flattened chicken breast and roll. Skewer with a tooth pick and then dust with flour. Brown in a little bit of hot oil.
Place in pan and bake at 350 degrees for 15 minutes. Remove from oven, pull out toothpicks and slice into pinwheels.
After removing the chicken breasts from your oven-proof pan, you can make the most amazing sauce with the drippings. Just put 1-2 tablespoons of flour with 1-2 tablespoons butter in a small bowl and smoosh them together with your fingers to make a paste (there's a French name for this method of thickening a sauce but forgot). Throw your paste into the pan drippings on medium heat, stir it around until its a little light brown then add either chicken broth or cream (depending on your diet). Taste to see if you need to add more salt and pepper. Pour over pinwheels.
