     Easy Apricot Buffalo Drumettes

Ingredients
1 bag skinless chicken drumettes (approx 20 drumettes, the drumstick part of the chicken wing)
1 small jar apricot all-fruit (not jelly or jam)
1/2 teaspoon salt
4 Tablespoons Tapatio (or other hot sauce you find you like)
2 Tablespoons Green Tabasco
1/4 cup lime juice
2 Tablespoons powdered ginger
1 cup water
2 Tablespoons cornstarch
 
2 Tablespoons water

Instructions
Empty bag of drumettes into a large, deep skillet or into a large pot. In a separate bowl, mix together the apricot all-fruit, lime juice, ginger, tapatio hot sauce, green hot sauce, salt, and water. Pour over drumettes. Note- it seems like it's a lot of ginger, but in actuality it balances out the 6 tablespoons of hot sauces and the apricot spread very nicely. -)
Cook on medium heat until the drumettes are well-cooked. If the sauce gets too thick in the meantime, add more water. Once the drumettes are cooked, try to boil down some of the water from the sauce.
After the chicken is cooked, in a separate bowl put 2 T of cornstarch with 2 T of water. stir together, then slowly stir in the cornstarch mixture into the chicken. This will make the sauce super thick.
Cook until it's a consistency you like and it's very sticky.
Serving Suggestions
3-4 drumettes per person
